Set the saree’s lower clearance with the footwear you will actually use, then test steps and seated movement.

Footwear changes the height at which a saree hem sits above the ground. Choose the pair before adjusting the drape or requesting work on the lower edge. A change from a thick sole or heel to a very flat shoe can alter clearance enough to create dragging.
Put on the complete base layers and the intended shoes before arranging the saree. Use the draping style you normally wear or get help from someone familiar with that style. Saree arrangements vary, so a single fixed measurement from the floor is less useful than checking the finished outfit in motion.
Take ordinary steps, turn and step onto a low, stable step. The fabric should not slip beneath the heel or require a shortened stride. Look at the back as well as the front; an uneven tuck can leave one section lower even when the front appears clear.
Sit on a chair and stand again. Notice whether the waist fastening or pleats shift and change the lower edge. If they do, address the support and drape rather than simply lifting one section higher. Avoid using a tight waistband to compensate for an unstable arrangement.
If you plan a second pair of shoes, test it now. You may need two pairs with a similar effective height, or you may decide that changing footwear is not useful for this outfit. Do not assume a saree adjusted for the first pair will automatically work with the second.
A shoe's appearance is only one consideration. It should feel secure on the surfaces expected at the event and be comfortable before the day begins. Check straps and any decoration for contact with the saree's lower edge. Raised details can catch delicate fabric even when the height is appropriate.
When asking a tailor or draping assistant for help, bring the actual shoes and explain whether you will change them. Distinguish an adjustment to the way the saree is worn from a permanent alteration to the fabric. Confirm exactly what work is proposed before it is done. A clear movement test in the intended footwear is more useful than choosing a hem by eye while barefoot.
